INGREDIENTS

  • 2 cups all-purpose flour
  • 3 tbsp granulated sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • ΒΌ tsp salt
  • 1 ΒΌ cup milk
  • 1 tablespoon lemon zest, from 1 lemon
  • 2 eggs, lightly beaten
  • 1 tsp pure vanilla extract
  • 3 tbsp unsalted butter, melted and cooled slightly
  • Β½ cup freshly squeezed lemon juice, from 2 lemons

INSTRUCTIONS

  1. Preheat the griddle to medium heat.
  2. In a large bowl, combine flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk together milk, lemon zest, eggs, vanilla, and melted butter. Add this mixture to the dry ingredients and mix lightly. Gently fold in the lemon juice; the mixture will bubble up and become somewhat fluffy. Be careful not to overmix.
  4. Drop batter onto the hot griddle in 1/4 cup portions.
  5. Cook for 3-4 minutes or until bubbles appear on the top and remain without popping. Flip the pancakes and cook for an additional 3-4 minutes or until they turn golden brown.

NOTES

  • This recipe yields 20-24 pancakes, the exact number depending on the size you choose to make them.
