CRUST:

  • 1 1/2 cup rolled oats
  • 1/2 cup desiccated coconut
  • 1/4 cup nut butter
  • 2 tablespoon cocoa powder
  • 3 tablespoon maple syrup

FILLING:

  • 1 cup full-fat coconut milk
  • 1/2 cup almond milk
  • 1/3 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch
  • 2 teaspoon agar-agar
  • juice and zest of 1 lemon; adjust to taste
  • optional coloring: turmeric powder

Instructions
 

  • Pop the crust ingredients into a food processor and blend until you get a sticky, sandy texture.
  • Press that mixture into a greased 18 cm pan, making sure to get it into the edges, then let it chill while you work on the filling.
  • In a pot over medium-low heat, stir the milks together and bring them to a gentle simmer.
  • Add the rest of the filling ingredients, stir well, then take it off the heat and whisk until everything's smooth and combined.
  • Let the mixture cool for 8 minutes, then pour it into your prepared crust.
  • Now comes the hard part—waiting! Place the tart in the fridge to set for at least 2 hours before slicing and serving.

    I’m curious about the crust. The recipe has cocoa powder but in the photos, the crust looks quite pale. Is this correct?

      The crust does have cocoa powder, but it stays lighter in color because of the type and small amount used. It’s more for flavor than for a dark color. Totally normal if yours looks a bit pale, enjoy ♥
