Apple Cake

This amazing Apple Cake is the perfect recipe for a quick dessert or to accompany your afternoon tea.

Ingredients

  • 2 Large Apples
  • 2 Eggs – at room temperature
  • 80 grams (1/3 cup) Brown Sugar
  • 120 grams (1/2 cup) Unsalted Butter – melted
  • 120 grams (1/2 cup) Applesauce – preferably unsweetened
  • 150 grams (1 cup) Plain / All-Purpose Flour
  • 1 1/2 tsp Baking Powder
  • 1/2 tsp Ground Cinnamon – optional
  • 1 pinch Salt
  • Flaked Almond – optional to taste
  • Raw Sugar – optional to taste

Instructions

  1. Preheat your oven to 180°C (350°F). Line the bottom of a 24 cm (9-inch) springform pan and gently grease the sides.
  2. Melt the butter in the microwave and set it aside to cool down.
  3. Peel, core, and cut the apples into tiny cubes. Set aside.
  4. In a big mixing bowl, whisk the eggs and brown sugar until foamy. Add the melted butter and applesauce, then whisk until combined.
  5. Mix in the flour, baking powder, cinnamon, and salt. Stop whisking as soon as combined.
  6. Fold in the apples. Pour the mixture into the prepared springform pan and spread it around.
  7. Optionally, top with flaked almonds/raw sugar.
  8. Bake for about 30 to 35 minutes or until a skewer comes out clean.
  9. Allow the cake to cool down completely before removing it from the pan and serving.
