INGREDIENTS
Oat Crisp Crust & Topping
- ½ cup quick-cooking oats
- 1 ½ cups all-purpose flour
- 1 cup brown sugar packed
- ¼ tsp baking powder
- ¼ tsp baking soda
- 1 ½ tsp ground cinnamon
- ¾ cup butter melted
Cream Cheese Layer
- 2 8 oz packages cream cheese room temperature
- ½ cup granulated sugar
- 1 tsp vanilla extract
- 2 large eggs room temperature
Apple Pie Layer
- 3 large Granny Smith apples peeled, cored, and thinly sliced
- 1 tbsp all-purpose flour
- 1 tbsp brown sugar
- 1 tsp cinnamon
- Caramel topping for garnish
INSTRUCTIONS
1. Preheat your oven to 350°F. Line a 9-inch baking pan with parchment paper and lightly grease it.
Oat Crisp Crust & Topping
- In a big bowl, combine oats, flour, brown sugar, baking powder, baking soda, and cinnamon.
- Add melted butter to the mixture. Use a fork to blend until it becomes crumbly.
- Take 1 ¼ cups of the oat mixture for the topping and set it aside.
- Pour the rest of the oat mixture into a greased 9-inch baking pan and press it firmly to form the crust.
- Bake for around 15 minutes or until it turns golden brown. Meanwhile, prepare the cream cheese mixture.
Cream Cheese Layer
- In a big bowl, mix softened cream cheese, sugar, and vanilla until smooth and creamy using a mixer.
- With the mixer on low, add the eggs one at a time until fully mixed. Set aside
Apple Pie Layer
- In a big bowl, mix together apples, flour, brown sugar, and cinnamon.
- Assemble the Apple Crisp Cream Cheese Bars:
- Spread the apples over the baked crust.
- Smooth the cream cheese mixture over the apples.
- Sprinkle the reserved oat mixture on top of the cream cheese layer.
- Bake for 40-45 minutes.
- Allow the bars to cool completely, then refrigerate until ready to serve.
- To cut, easily lift the cheesecake bars out of the pan using parchment paper.
- If desired, add caramel topping just before serving.
