Key Lime Pie Recipe

Ingredients
- Graham cracker crust:
1 1/4 cups graham cracker crumbs
5 tbsp butter, melted
4 tbsp sugar - Filling:
1 (14-ounce) could sweetened condensed milk
4 egg yolks
1/2 cup plus 2 tbsp fresh Key lime juice (could substitute standard lime juice)
2 tsp very fine lime zest - Topping:
3/4 cup chilled heavy cream
3 tbsp powdered sugar, sifted
Lime zest, optional
Lime slices, optional
Instructions
- Make crust:
Set the oven to 350 degrees.
With a fork, thoroughly combine the graham cracker crumbs, sugar, and butter in a bowl. Then, press the mixture onto the bottom and up the side of a 9-inch pie plate.
Bake for about 10 minutes, then let the pie plate cool on a rack. Keep the oven on. - Make filling and bake pie:
Condensed milk and yolks should be thoroughly combined in a bowl. Juice and zest can now be added. Whisk to thoroughly combine.
Place the filling in the crust and bake for about 15 minutes in the center of the oven. The pie should be fully cooled on a rack (the filling will set as it cools), then chilled, and covered, for at least about 8 hours. - Make topping:
Just before serving, use an electric mixer to beat cream and powdered sugar in a bowl until it just holds stiff peaks. Serve pie with cream on top. If needed, add lime zest or slices as a garnish.
