Ingredients
1 lb. spaghetti
2 tablespoons of olive oil
salt & pepper to taste
1 lb. of chicken cutlets*
1 cup of yellow onion diced
1/2of red bell pepper diced
1/2 of green bell pepper diced
1 small can mild diced green chiles
16.9 oz of alfredo sauce Trader Joe’s brand preferred (1 jar)
1 teaspoon of cumin
1/2 teaspoon of chili powder
1/2 teaspoon of garlic powder or granulated garlic
1 cup chicken broth
8 oz. sharp of cheddar cheese grated
a few splashes of chicken broth or milk as needed
chopped cilantro optional
Instructions
1. Bring the water to a boil in a big pot, According to package instructions, add salt and cook spaghetti until al dente. Drain and reserve the pasta. Use medium heat to replace the hot pot.
2. To stretch across the bottom, add oil and swirl. Sprinkle with salt and pepper on the chicken cutlets and brown 3 minutes per side in oil until properly cooked. Set aside to rest and remove from the pot.
3. Saute 5 minutes or until mostly tender, with onion and peppers. Stir in the alfredo sauce, green chiles, and spices. Pour the broth of the chicken into an empty jar of alfredo, put the lid, and shake. Pour the contents into the container. Cut the browned chicken into pieces that are bite-sized and add them to the pot.
4. Taste the sauce as required and adjust the seasonings. Put the spaghetti and grated cheddar cheese in the mixture until the pasta is completely covered in sauce. This will have a tendency to thicken as it sits, so add chicken broth or milk in small splashes as required, and stir to keep it at the consistency you want before serving.
5. Sprinkle with cilantro and start serving.
