Chicken and Broccoli Stir Fry
“Simple Chicken Dinner” takes on a whole new purpose with Chicken and Broccoli Stir Fry. It’s simple, but the end result is flavorful and sure to please! It’s also a healthy chicken recipe that will help you stick to your New Year’s resolutions.

Ingredients
3 Tbsp of soy sauce, or to taste
1 1/2 Tbsp of Argo® Corn Starch
2/3 cup of low-sodium chicken broth
1 1/2 Tbsp of honey
1 Tbsp of packed brown sugar
1 1/2 tsp of rice vinegar
1 tsp of sesame oil
1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
3 Tbsp of vegetable oil or mabye light olive oil
1/2 cup of chopped green onions (only white and light green portion)
1 Tbsp of peeled and minced ginger
1 Tbsp of peeled and minced garlic
5 cups of small broccoli florets
3 Tbsp of water
Sesame seeds, for serving (optional)
White or brown rice, for serving
Instructions
1. Whisk together the soy sauce and cornstarch in a medium mixing bowl. Set aside, add the chicken broth, honey, brown sugar, rice vinegar, and sesame oil.
2. Heat 1 Tbsp of vegetable oil over fairly high heat in a 12-inch non-stick skillet. Dry the chicken with paper towels before placing it in a single layer in the skillet.
3. Cook the chicken, turning halfway through, for about 7 minutes, or until the center registers 165 degrees. To keep warm, move to a sheet of aluminum foil and wrap.
4. Lower the heat on the burner slightly and heat the remaining 2 tablespoons of oil in the now-empty skillet. Garnish with green onions, ginger, and garlic and sauté for 30 seconds.
5. Add the broccoli and water to the pan and cook until tender, approximately 5 minutes, adding 1 to 2 tablespoons water as required.
6. Stir the mixture of soy sauce once again, then pour it into the skillet. Cook, stirring constantly, for another 2 minutes or until the sauce has thickened.
7. Stir in the chicken and any juices that have accumulated. Toss thoroughly. Serve warm over sesame seeds sprinkled with rice.
Notes
This stir-fry holds up well when reheated. You could still reheat it in a skillet with the lid on over medium heat.
