Whenever it’s fresh from the oven and still warm, this banana bread is heavenly, and on day 2, if anything, it is even more divine! I love having some vegan butter spread out.
If you’d like to put a finer point on it, it is indeed double chocolate banana bread. It has cocoa powder in the batter and also a lot of chocolate chips as well, so yeah, double chocolate!
There is an entire cup of chocolate chips going into this chocolate banana bread! So everything is sweet and gooey, and it’s incredibly delicious. In place of chocolate chips, you could also use chopped bars of vegan chocolate. Weigh out the chocolate if you’re doing that, so that you are using the correct amount.
TIPS FOR THE BEST CHOCOLATE BANANA BREAD
You need ripe bananas. This is the tip that is most significant. They’re more of a starch than sugar if your bananas were not ripe, and we all want them to be more of sugar than starch, so they have to be ripe. The ripe bananas are yellow everywhere (no green) and spotty.
Don’t over-mix the batter with it. All you need to do is mix it sufficiently to properly mix it. You want to mix it correctly, of course, so don’t worry about mixing it, just don’t overdo it, don’t use an electric mixer on it.
COULD YOU MAKE THIS CHOCOLATE BANANA BREAD GLUTEN-FREE?
I haven’t tried it, but I would suggest switching the all-purpose flour to a gluten-free all-purpose flour mix if you’d like to try it.
To compensate for the fact that gluten-free flours tend to absorb more moisture, you could use a little more coconut oil, and I’d probably add a few tablespoons of extra coconut oil, and since this is very wet banana bread, you’d likely be okay to raise the amount of oil by a small amount.
