PREP TIME: 30 minutes
COOK TIME: 25 minutes
TOTAL TIME: 55 minutes
YIELD: 12 BROWNIES

Ingredients

  • 1-2 tablespoons butter
  • 2 tablespoons cocoa powder
  • 1 cup butter
  • 2 cups white sugar
  • 4 eggs
  • 1 tablespoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 2/3 cup unsweetened cocoa powder, sifted
  • 1/2 teaspoon baking powder
  • 14-ounce can of sweetened condensed milk
  • 1 1/2 cups cool whip, thawed
  • 3.9-ounce instant chocolate pudding mix (dry)
  • 2 ounces semi-sweet chocolate chips, melted

Instructions

  1. Preheat your oven to 350 degrees F.
  2. Grease a 9×13 pan by coating it with 1-2 tablespoons of butter. Next, sift 2 tablespoons of cocoa powder over the buttered pan to ensure full coverage.
  3. In a large saucepan, melt 2 sticks (1 cup) of butter over medium heat until fully melted. Remove from heat.
  4. Combine sugar and vanilla into the melted butter, stirring until well combined.
  5. In a separate bowl, sift together flour, salt, cocoa powder, and baking powder.
  6. Add the dry ingredients to the butter and sugar mixture, stirring until well combined.
  7. Incorporate the eggs into the mixture, ensuring full incorporation without overmixing.
  8. Pour the batter into the prepared 9×13 casserole dish.
  9. Bake at 350 degrees for approximately 24 minutes, or until the brownies’ top is set, and the edges start to pull away from the pan.
  10. Once baked, let the brownies cool completely.
  11. In another bowl, mix 1 1/2 cups sweetened condensed milk (not the full can) with the dry pudding mix, ensuring a lump-free mixture.
  12. Gently fold in the Cool Whip until the mousse mixture is smooth.
  13. Spread the mousse over the cooled brownies and refrigerate until set.
  14. Melt chocolate and drizzle it over the top of the brownies.
  15. Serve as soon as the chocolate sets.
