INGREDIENTS
Pancakes
- 1 cup whole wheat flour
- 1 tbsp baking powder
- 1 tbsp coconut sugar
- 1 tbsp coconut oil
- 1 cup dairy-free milk
Cinnamon Filling
- ¼ cup vegan butter
- ½ cup brown sugar
- ½ tbsp cinnamon
Icing
- ½ cup confectioner’s sugar
- ½ tbsp dairy-free milk
INSTRUCTIONS
- Start by making your pancake mix. Combine all of the pancake ingredients and mix them well. Set the mixture aside to allow the baking powder to activate and the pancakes to fluff up.
- Next, mix together your cinnamon-filling ingredients. Ensure your vegan butter is at room temperature. Transfer the cinnamon filling to a piping bag and snip a tiny hole at the bottom.
- Grease your pan and add about a 1/4 cup scoop of batter for each pancake. While the batter is still wet in the pan, start creating your cinnamon swirl by piping the cinnamon filling onto the pancake batter.
- Reminder! When you’re swirling the filling into the pancake batter, gently press the piping bag into the pancake.
- This makes a little tunnel for the filling to stay in while cooking. If you just put the cinnamon filling on top without pressing it in, the swirl might get messed up when you flip the pancake.
- Repeat this step for all your pancakes.
- Finally, to make the icing, mix confectioners sugar and dairy-free milk until smooth.
- Drizzle it over your pancakes, and you’ll have cinnamon roll pancakes!
