Ingredients
Edible Cookie Dough
- 1 cup all-purpose flour, heat treated
- ½ cup unsalted butter, at room temperature
- ½ cup light brown sugar
- ¼ cup granulated sugar
- ¼ tsp kosher salt
- 1 tsp vanilla extract
- 2 tbsps milk
- ½ cup mini chocolate chips
Topping
- 8 ounces dark chocolate, melted
- 1 tsp coconut oil
Optional
- white chocolate
- chocolate sprinkles,
- flaky sea salt
Instructions
To heat treat the flour:
- Preheat your oven to 350°F.
- Spread 1 cup of all-purpose flour evenly on a baking sheet lined with parchment paper.
- Bake for 6 minutes or until the flour reaches at least 160°F when checked with an instant-read thermometer.
- Allow the flour to cool completely before using.
- Sometimes heat-treated flour may clump together, so remember to sift it before using.
To make the Edible Cookie Dough:
- Using a stand mixer with the paddle attachment, or a large bowl with a hand mixer, cream together the room temperature butter, brown sugar, granulated sugar, salt, and vanilla until the mixture is light and fluffy, about 4 minutes.
- Add the milk and mix until well combined.
- Fold in the heat-treated flour. If the dough seems too dry, you can add more milk, 1 teaspoon at a time, until the dough comes together. Then fold in the mini chocolate chips.
- Line a small baking sheet with parchment paper.
- Using a cookie scoop or spoon, scoop the edible cookie dough into small 1 tablespoon-sized balls. Place the cookie dough balls on the baking sheet and freeze for around 30 minutes.
To Decorate:
- Combine the chopped dark chocolate and coconut oil in a microwave-safe bowl. Melt the chocolate and coconut oil in intervals of around 20 seconds in the microwave, stirring between each interval, until melted and smooth. Then, take the cookie dough balls out of the freezer. Dip them into the melted chocolate using a fork, shaking off any excess chocolate, then place them back on the lined baking sheet.
- If desired, sprinkle any toppings onto the cookie dough bites while the chocolate is still wet.
- Place the baking sheet in the fridge for another 30 minutes or until the chocolate has set.
- If you want to decorate the cookie dough bites further by drizzling more chocolate on top, let the first coating of chocolate harden first. Then, drizzle more chocolate over the top and let it harden.
