I’m admitting that I was amazingly skeptical about this cake, and I’m glad to say it was fantastic! I mean, I love cream cakes, however, if I knew I only could eat cakes, I’d be happy with my life. Cake-slight tartness, the sweet, yummy parts, and, best of all, the rich, creamy base with a thick crust had all the correct things to with it. I adored this cake, and it just took me over the top with the flavor of coconut + mango topping!

INGREDIENTS
Crust:
1 cup of pitted dates (soaked in hot water for 10 minutes then drained)
1 cup of raw macadamia nuts (you can substitute with almonds or walnuts)
Filling:
2 cups of raw cashews
1/4 cup of lemon juice
1/3 cup of coconut oil + 2 tablespoons
1/2 cup of coconut milk + 2 tablespoons (placed in the refrigerator from overnight) (see notes below)
1/2 cup of maple syrup + 1 tablespoon
