Fudgy Walnut Brownies
The perfect combination of fudgy and cakey, a little cakey around the edges and irresistibly fudgy in the center, are these walnut brownies. Rich, sweet, and filled with chocolate chunks and walnuts.
INGREDIENTS
Brownies
¼ cup of natural, unsalted creamy almond butter.
½ cup of coconut sugar.
1/3 cup of pure maple syrup.
¼ cup + 2 tablespoons of melted coconut oil.
¾ cup of unsweetened cocoa powder.
2 flax eggs (2 tablespoons ground flax + 6 tablespoons water, whisk together, set for 15 mins).
1 teaspoon of pure vanilla extract.
¼ teaspoon of salt.
¼ cup + 2 tablespoons of gluten-free oat flour – if using homemade, make sure it’s finely ground, not coarse.
Add-in Ingredients
¾ cup of walnuts, chopped
¼ cup of vegan chocolate chips or chunks
Optional Topping
2 tablespoons of walnuts, chopped
2 tablespoons of vegan chocolate chips
INSTRUCTIONS
1. To 325 ° F, preheat the oven. Line an 8-inch square baking pan with parchment paper or greased foil. Just set aside.
2. Whisk together the almond butter, coconut sugar, maple syrup, and melted coconut oil in a medium bowl. Whisk till caramel looks like it.
3. In 1⁄4 cup increments, add the cocoa powder, whisking until it becomes shiny and smooth. Scrape as necessary down the side of the bowl. Whisk in the vanilla, flax eggs, and salt.
4. Put in oat flour. Fold until well incorporated and no flour patches remain, using a rubber spatula.
5. Fold in the chocolate chips and walnuts. Into the pan, pour the batter. Smooth the batter into an even layer using a rubber spatula. Optionally, top the walnut and chocolate chips with 2 tablespoons of each.
6. Bake for 30 minutes. Cool for 1 hour or until very cold.
7. For clean slices, chill before cutting for 1-3 hours (after cooling totally). Like fudge, cold brownies will be dense and firm. Allow the room temperature to be reached for softening, or heat in 10-second increments until soft. Cut the brownies out of 16. Enjoy.
NOTES
1- Store for 1 week at room temperature in an airtight container. Brownies will firm up and become fudge-like if stored in the refrigerator and will last for up to 3 weeks.
2- These brownies freeze excellently. Up to 1 month of storage in an airtight, freezer-friendly container. Before sipping, thaw at room temperature for 10 min. Or, approximately 10 seconds of heat in the microwave.
