Greek Chicken and Potatoes

INGREDIENTS
6 bone-in, skin-on of chicken thighs
1 pound of small Yukon gold potatoes halved
1/2 cup of olive oil
1/3 cup of lemon juice
1 teaspoon of lemon zest
2 teaspoons of kosher salt
1 teaspoon of pepper
1 tablespoon of minced garlic
2 teaspoons of dried oregano
2 tablespoons of chopped fresh parsley
lemon wedges for garnish

INSTRUCTIONS
Preheat the oven to 400 degrees F.
1. In a big bowl put the olive oil, lemon juice, lemon zest, salt, pepper, garlic, and oregano. Whisk in order to combine. To the bowl, add the chicken and potatoes; toss with the marinade to coat. Use cooking spray to coat a sheet pan. Arrange a single layer of the chicken and potatoes in the pan.
2. Bake for around 45 minutes, stirring halfway through the cooking time, or till the chicken is done and the potatoes are tender. With parsley, sprinkle.
3. Garnish with wedges of lemon and start serving.
