Fresh lemon juice is essential to make these cookies taste the best. You’re also going to want the zest of one lemon, so be aware to zest the lemon before you juice it. Just a touch of pure vanilla extract helps to balance the bitterness of the lemon well.
We as well love to roll the cookie dough in extra sugar before placing it on the cookie sheets. This, of course, was the favorite part for children!

INGREDIENTS
Lemon Cookies
½ cup of dairy-free buttery spread or stick (I used an Earth Balance Soy Free stick)
1¾ cup of all-purpose flour
¾ cup of sugar
⅓ cup of plain dairy-free milk beverage
1 egg replacer (I used Bob’s Red Mill; Ener-G is another good option)
2 teaspoons of lemon juice
1¼ teaspoon of baking powder
1 teaspoon of lemon zest
¼ teaspoon of baking soda
Lemon Glaze
¼ cup of sugar
2 tablespoons of lemon juice
Instructions
Lemon Cookies
1. Preheat the oven to 350ºF and line cookie sheets with parchment paper.
2. Put the buttery spread or sticks in a big mixing bowl and beat with a hand mixer on medium-high for around 30 seconds. Put 1 cup of flour, sugar, milk beverage, egg replacer, 2 teaspoons lemon juice, baking powder, lemon zest, and baking soda. Blend until thoroughly combined. Add the remaining ¾ cup flour, and stir to mix.
3. Drop the dough by rounded teaspoonfuls onto your prepared cookie sheets, approximately 2 inches apart. Bake for around 10 min or until the edges are lightly browned.
4. And let cookies cool for Around 3 minutes on the baking sheet, and then remove them to a wire rack to cool entirely.
Lemon Glaze
1. Whisk the sugar and the lemon juice together in a small bowl. Brush the tops with this lemon-sugar glaze once are cooled.
