Ingredient Notes

Crust:

  • Oats: Provide structure and a mildly nutty flavor, creating a hearty base for the cake that holds together well when chilled.
  • Desiccated Coconut: Adds tropical sweetness and a pleasant chewiness that complements the creamy filling.
  • Flax Seeds (or Nuts/Seeds): Boost the crust with healthy fats, texture, and a mild earthy flavor that pairs well with the rest of the ingredients.
  • Maple Syrup: Naturally sweetens the crust and acts as a binder for the dry ingredients.
  • Peanut Butter: Brings rich, nutty flavor and creamy texture that helps hold the crust together.
  • Water: Helps blend and bind the crust mixture, ensuring it presses easily into the pan.

Filling:

  • Frozen Bananas: The creamy, naturally sweet base of the ice cream layer, giving it a soft-serve consistency when blended.
  • Lemon Juice: Adds brightness and balance, enhancing the flavor and preventing the bananas from browning.
  • Coconut Milk (from a can): Provides richness and a smooth, velvety texture, contributing to that classic ice cream feel.
  • Matcha Powder: Infuses the filling with earthy, grassy notes and a beautiful green hue, perfectly balancing the sweetness.

Tips for Making the Best Matcha Ice Cream Cake

  • Use High-Quality Matcha Powder: Ceremonial or culinary grade for the best flavor and color.
  • Let Ice Cream Soften Slightly Before Spreading: Makes it easier to layer evenly.
  • Chill Each Layer as You Go: Ensures clean, firm layers when slicing.
  • Line the Pan with Parchment: Helps you lift the cake out easily for serving.
  • Decorate with Flair: Try white chocolate drizzle, matcha dusting, or whipped cream swirls, berries.

Serving Suggestions

  • With Fresh Berries: Strawberries and raspberries brighten each bite.
  • With a Drizzle of Condensed Milk or White Chocolate: For extra sweetness.
  • With a Hot Cup of Green Tea: Enhances the matcha experience.

Ingredients

CRUST

  • 1 1/4 cup oats
  • 1/2 cup desiccated coconut
  • 1/4 cup flax seeds or nuts/seeds of your choice
  • 1/4 cup peanut butter
  • 2 tablespoon maple syrup
  • 2 tablespoon water plus more as needed

FILLING

  • 4 frozen bananas
  • 1 tablespoon lemon juice
  • 1/2 cup coconut milk from a can
  • 1 teaspoon matcha powder or to taste

Instructions

  • Pop all the crust ingredients into a food processor and blend until everything comes together into a smooth, even mix.
  • If it feels too dry, just add a tablespoon of water at a time until the texture is a little sticky—like wet sand.
  • Once it’s ready, scoop the mixture into your cake pan and press it down to form a nice, even crust. Set it aside while you move on! 😊

Time to make the filling!

  • Toss the bananas, lemon juice, and coconut milk into the food processor and blend until silky smooth.
  • Pour about two-thirds of that creamy goodness over the crust and smooth it out nicely.
  • Now, take the remaining mixture and mix in the matcha powder. Pour that over the first layer, give the pan a gentle wiggle to even it out, and pop it into the freezer for at least 3 hours to set.
  • When you're ready to serve, let it sit out for 10 minutes, then slice it up with a hot knife for clean, perfect pieces. Enjoy! 🍰💚
