PREP TIME: 20 mins
COOK TIME: 30 mins
SERVINGS: 12 slices
INGREDIENTS
- For the cake:
3 cups Flour
½ cup Cocoa powder
2 cups Granulated sugar
2 teaspoon Baking powder
1 teaspoon Baking soda
3 Eggs
½ teaspoon Kosher salt
1 teaspoon Vanilla extract
¾ cup Vegetable oil
1 cup Buttermilk
1 cup of hot coffee - For the chocolate frosting:
340 gram Butter
2 teaspoon Vanilla extract
2 cups Powder sugar
½ cup Cocoa powder
100 gram Semisweet chocolate melted and cooled
INSTRUCTIONS
- For the cake:
Two 8-inch baking pans should be prepared with parchment paper and the oven should be preheated to 180 (350f).
Add the flour, sugar, baking soda, baking powder, and cocoa powder to a large bowl. Blend fully with a whisk until combined.
Buttermilk, oil, vanilla extract, and eggs should all be added. Then fully combine.
Once the batter is smooth, combine the kosher salt and hot coffee.
In order to ensure even baking, divide the mixture between two 8-inch baking pans. Bake in a preheated oven for about 25-30 minutes, or until a toothpick inserted in the center comes out clean (weight the batter for better results). Before frosting, let the cake cool completely. - For the frosting:
Make the chocolate frosting: Using a hand mixer or a stand mixer, beat butter in a big bowl until it is fluffy and light.
Carefully combine the cocoa powder, half of the powdered sugar, and vanilla.
Once smooth, add the other half of the powdered sugar.
Melt dark or semisweet chocolate, then allow it to cool to room temperature.
The mixture should be smooth and well-combined after the addition of the melted chocolate. - For the assembly:
On the surface, you will be frosting, pipe a tiny dollop of the frosting. Over the frosting dot, place the first cake layer.
On top of the cake layer, pipe 1/3 of the frosting and spread it out into an even layer.
Add the second cake layer on top, then frost the cake. - For decoration:
To give the cake a rustic appearance, smooth the sides of the cake (it should not look perfect), and make waves on the top.
NOTES
Do not skip the coffee in the cake; you will not be able to taste it; it just makes the chocolate taste much better.
Use cake strips! Cake strips give layers of cake that are evenly and perfectly baked.
Before adding melted chocolate to the chocolate frosting, let it cool.
This step is essential; otherwise, the hot melted chocolate will melt the butter and ruin the chocolate frosting.
