- 3-4 Tbsp extra virgin olive oil
- 1 medium yellow onion and diced

- 2 celery stalks and chopped
- 1 Tbsp minced garlic
- 2 cups chicken broth
- 1 ½ cups jasmine rice and rinsed
- ½ cup shredded/grated Parmesan cheese
- ground black pepper to taste
- salt to taste
- ⅓ cup chopped fresh parsley
Instructions
- In a 3-quart stockpot, warm olive oil over medium-high heat. Add the chicken pieces, seasoning them with salt and pepper (approximately 1 teaspoon of salt and 1/4 teaspoon of pepper works well).
