Are you tired of all the cookie recipes I’ve been posting? Well, I hope not because I have another one, and maybe even more to come.

Isn’t that what the first few weeks of December are made for? Cookies, cookies, and more cookies!

They’re perfect for the holidays!

During this festive season, I enjoy making a variety of cookies, and there always has to be some kind of chocolate cookie, right? Hot chocolate cookies have been on my to-do list for about four years, and I finally got around to trying them. But, of course, I had to add a peppermint twist because I love the combination of chocolate and peppermint.

Full of Rich Chocolate Flavor

I love that the base for these cookies is loaded with chocolate. Not just cocoa, but a lot of chopped chocolate. This gives them a rich flavor and a chewy, fudgy texture. They’re almost like a brownie cookie.

Best Enjoyed Melty and Warm!

Make sure to savor a few of these cookies while they’re warm. They’re still good for a couple of days, but they are absolutely perfect when you ice them right out of the oven and enjoy a couple of them right away – it’s like having hot chocolate that way too.

Ingredients

Cookies

  • 12 oz. semi-sweet baking chocolate, broken into pieces or chopped
  • 1/2 cup (113gram) unsalted butter, diced into 1 tablespoon pieces
  • 1 1/2 cups (213gram) all-purpose flour
  • 1/4 cup (21gram) unsweetened cocoa powder
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/4 cups (280gram) packed light brown sugar
  • 3 large eggs
  • 1 teaspoon peppermint extract
  • 1 teaspoon vanilla extract
  • 24 large marshmallows

Icing

  • 2 cups powdered sugar
  • 1/4 cup (21gram) cocoa powder
  • 4 tablespoons (56gram) unsalted butter, diced into tiny pieces
  • 1/4 cup half and half
  • 1/4 teaspoon peppermint extract

Instructions

For the cookies:

  1. Put chocolate and butter in a bowl that’s safe for the microwave. Heat it in the microwave for 30 seconds at a time, stirring until it’s melted and smooth. Let it cool a bit.
  2. In another bowl, mix flour, cocoa powder, baking powder, and salt. Set it aside.
  3. In a mixer, combine brown sugar, eggs, peppermint extract, and vanilla.
  4. Add the melted chocolate mixture to the mixer and blend.
  5. Gradually mix in the flour mixture at low speed until just combined.
  6. Cover the bowl and chill the dough for about 1 hour (or divide it into two containers for faster chilling). Preheat the oven to 325 degrees in the last 15 minutes of chilling.
  7. Scoop out about 1 tablespoon of dough at a time, shape it into a ball, and place it on a baking sheet lined with parchment paper. Keep cookies 2 inches apart and keep the remaining dough chilled.
  8. Bake in the preheated oven for about 9 minutes until slightly under-baked.
  9. While the cookies are baking, cut the marshmallows in half.
  10. Take the cookies out of the oven and put a marshmallow half on each one, cut side down. Put them back in the oven for around 2-3 more minutes until the marshmallows start to melt.
  11. Take the cookies out again and gently press down on the marshmallows to flatten them a bit.
  12. Let the cookies cool on the pan for a few minutes, then transfer them to wire racks set over baking sheets.

For the icing:

  1. In a medium bowl, sift powdered sugar and cocoa. Set it aside.
  2. Heat butter and cream on medium heat until the butter melts and the mixture simmers. Stir frequently.
  3. Remove from heat, pour in the sifted powdered sugar and cocoa, and whisk until smooth.
  4. Add peppermint extract to the mixture.
  5. If the mixture is too thick, add a bit of hot water. If it’s too thin, mix in a little more sifted powdered sugar.
  6. Spoon the icing over the cookies immediately, or you can drizzle it from a resealable bag with a cut corner.
  7. Sprinkle crushed peppermint on each cookie right after adding the icing because the icing sets quickly.
