Ingredients
2 chicken breasts (1 lb)
8 large potatoes, sliced
2 Tbsp cilantro, chopped
2 Tbsp dill, chopped
12 oz mushrooms, sliced
1 small onion, chopped
2 garlic cloves, minced
4 Tbsp butter
2 cups shredded mozzarella cheese
oil, for sauteing
sauce
4 Tbsp sour cream
1 egg
2 Tbsp mayonnaise
1 1/2 cups whole milk
½ tsp salt
¼ tsp ground black pepper
chicken seasoning
½ tsp ground paprika
1 tsp salt
¼ tsp ground black pepper
1 tsp Italian seasoning
Instructions
1. Before even in thickness, beat chicken breast. Mix the chicken seasonings in a dish. Season the chicken breasts on both sides.
2. Heat 2 Tablespoons of oil over medium/high heat in a skillet. Sear each side of the chicken for 3 mins. Turn the heat down to low and cook for 6 more minutes, till the chicken is entirely cooked and tender.
3. In the meantime, peel the slices of the potatoes into thin slices. Saute the potato for almost ten minutes or till the potatoes are tender, over medium/high heat. Season the potatoes with salt and pepper.
4. In order to stay warm, remove the chicken from the skillet and cover. Saute the mushrooms with chopped onions and minced garlic in the same skillet. Cook till there are golden mushrooms, salt, and pepper to taste.
5. Mix the sour cream, egg, mayo, milk, salt, and pepper together in a cup.
6. Move them into a casserole dish once the potatoes are tender. Around the bottom of the casserole dish, spread them fairly. Top with greens chopped together.
7. In thin strands, slice the chicken breast. Place it in the casserole dish over the potatoes. Cover the mushroom mixture with the chicken. Add 4 tablespoons of butter to the cup.
8. Mix all the sauce ingredients and pour all over the casserole with the sauce. Cover the dish with foil and add the cheese.
9. Bake for 35 minutes at 400 ° F, remove the foil and bake for an extra ten min. Add and serve more herbs.
