Pumpkin Cookies with Cream Cheese Frosting Recipe
With a soft cake-like texture and then a perfectly moist crumb, a classic autumn spice-filled pumpkin cookie. Crowned with a rich and sweet frosting of cream cheese and sure to leave you craving more and more!

Ingredients
2 cups (284g) of all-purpose flour (scoop and then level to measure)
1 tsp of baking soda
1/2 tsp of baking powder
3/4 tsp of salt
1 1/2 tsp of ground cinnamon
1/2 tsp of ground nutmeg
1/2 tsp of ground ginger
1/8 tsp of ground cloves
10 Tbsp (140g) of unsalted butter, and softened
3/4 cup (160g) of granulated sugar
1/2 cup (110g) of packed light brown sugar
1 large egg
1 tsp of vanilla extract
1 cup (243g) of canned pumpkin
Cream Cheese Frosting
5 Tbsp (70g) of unsalted butter, and nearly at room temperature
4 oz. cream cheese, and nearly at room temperature
2 cups (248g) of powdered sugar
1/2 tsp of vanilla extract
Instructions
– Preheat the oven to 350 degrees with silicone baking mats or parchment paper, and line two 18 by 13-inch baking sheets.
– Whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and then the cloves for 20 seconds in a medium mixing bowl and set aside.
– In the electric stand mixer bowl, mix butter and granulated sugar, and brown sugar together until well combined with the paddle attachment cream.
– Mix in the egg, then mix in the vanilla and pumpkin.
– Add the mixture of flour and then mix until mixed.
– Using a 1 1/2 Tbsp cookie scoop (filling it just slightly heaping) to scoop out dough and then drop cookies 2-inches apart on prepared baking sheet spacing.
– Bake one sheet at a time and cook for around 15 minutes until the cookies are set. Cool for several minutes on a baking sheet and then transfer to a wire rack to cool completely.
– Once the cream cheese frosting cookies have been cooled and then stored in an airtight container in a single layer in the refrigerator.
– Before serving, bring it to room temperature.
For the cream cheese frosting:
– Use an electric hand mixer to whip the butter into a mixing bowl and then cream cheese until smooth and fluffy.
– Mix in the sugar and vanilla powder and mix until well mixed.
