Red Velvet Pancakes

These fluffy red velvet pancakes with cream cheese glaze create a wonderfully impressive breakfast or brunch! And the best part? They’re so easy to make!

Ingredients

  • 1 cup all-purpose flour
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 1 tbsp sugar
  • 1 tbsp unsweetened cocoa powder
  • 1 egg, beaten
  • 3/4 cup buttermilk
  • 2 tbsp butter, melted
  • 4 tsp red food coloring

Cream Cheese Glaze

  • 2 oz cream cheese, softened
  • 3/4 cup powdered sugar
  • 1 ½ tbsp milk, may need a few drops more
  • 1/2 tsp vanilla extract
  • powdered sugar, garnish

Instructions

Pancakes

  1. In a big bowl, mix together flour, baking powder, salt, sugar, and cocoa powder.
  2. Add egg, buttermilk, butter, vanilla extract, and red food coloring.
  3. I used to add the red food coloring last, but now I find it easier to add it before stirring everything.
  4. Gently stir until combined; it’s okay if there are still a few lumps.
  5. Let the batter sit for 10-15 minutes while you prepare the glaze.

Glaze

  1. In a medium-sized bowl, combine all the cream cheese glaze ingredients until smooth. Set it aside.
  2. Heat a griddle and grease it with butter.
  3. Once it’s hot, pour ¼ cup of batter per pancake onto the griddle.
  4. Flip the pancakes when you see the first few bubbles breaking on the surface.
  5. When the other side feels soft and pillowy, the pancake is done!
  6. Stack the pancakes on a plate.

Assemble

  1. Place one pancake on a plate and spread a layer of cream cheese glaze on top.
  2. Repeat with another pancake.
  3. Stack the third pancake and sprinkle powdered sugar on it.
  4. Pipe on some more cream cheese glaze.
  5. Serve and enjoy!

Notes

  • Don’t mix the batter too much; it’s okay if it’s a bit lumpy.
  • No need for syrup with this recipe; the cream cheese glaze is plenty.
  • Don’t skip the cream cheese glaze—it’s the best part. Without it, the pancakes taste like plain buttermilk with a hint of chocolate.
  • Get creative with the food coloring; try different colors for fun pancakes.
