INGREDIENTS
for the tart crust:
1½ cups of all-purpose flour
½ cup of powdered sugar
½ teaspoon of kosher salt
1 stick of unsalted butter, cold, and cut into cubes
1 large egg
1 tablespoon of olive oil
for the walnut caramel filling:
¾ cup of granulated sugar
¼ cup of water
¾ cup of Hood Heavy Cream
1 tablespoon of unsalted butter, cold
1 tablespoon of vanilla extract or ½ tablespoon vanilla paste
1 teaspoon of sea salt
1½ cups of walnut pieces
INSTRUCTIONS
1. Add all the ingredients for the tart crust into a food processor and pulse until everything is mixed and a ball of dough forms off the side of the processor. Use plastic wrap to wrap the dough and refrigerate for 2 hours.
2. Preheat the oven to 350F once the dough has chilled, and lightly grease a 9-inch tart pan. Just set aside.
3. Over the floured surface, roll the dough out then press into the tart pan. Dock with a fork and bake for around 20 mins until the edges of the tart pan are lightly golden brown. While you make the filling, cool on a wire rack.
4. In a tall saucepan, mix the sugar and water with your hands until all of the sugar is just like wet sand. Put over medium heat and do not stir, because, the sugar will crystallize. As it melts and cooks, the sugar will change into a gorgeous golden color, so you can carefully place the measured cream over it when it is a light golden color. It’s going to bubble like crazy, so stand back for a second, and stir and lower the heat with a whisk in your hand. For a second, the sugar will stick to the whisk and then melt again. Add the salt, butter, and vanilla, remove from the heat and keep stirring. Set aside for 15 minutes to cool down.
5. When the caramel thickens slightly, place the walnuts on the cooled tart shell in a single layer and carefully pour the caramel over the walnuts, making sure it is everywhere in the tart. Use a fork to carefully move around the walnuts to make sure there is caramel in each spot.
6. Before serving, chill the tart to set the caramel and enjoy it chilled!
