Ingredients
4 (6 oz) of skinless salmon fillets
1 1/4 tsp of ground coriander
1 tsp of ground cumin
1/2 tsp of ground paprika
1/2 tsp of ground cinnamon
1/2 tsp of ground ginger
1/4 tsp of turmeric
1/4 tsp of ground nutmeg
1/8 tsp of cayenne pepper
1 Tbsp of olive oil
Salt and freshly ground black pepper
Lemon Yogurt Sauce
1/2 cup of fat-free plain Greek yogurt
2 Tbsp of heavy cream or whipping cream
1/4 tsp of lemon zest
2 tsp of fresh lemon juice
1 tsp of minced fresh garlic
1 Tbsp of finely minced fresh cilantro, and more for serving
Instructions
1- At room temperature, let the salmon rest for 10min.
2- Whisk the coriander, cumin, paprika, cinnamon, ginger, turmeric, nutmeg, and cayenne pepper together in a mixing bowl.
3- Heat olive oil over medium-high heat in a 12-inch non-stick skillet.
4- After sprinkling, season both sides of the salmon with salt and pepper and rub both sides with the spice mixture. In a skillet, cook the salmon for about 4 minutes on each side. Plate and top with sauce of lemon yogurt & cilantro garnish.
For the sauce
1- Combine the yogurt, cream, zest, juice, garlic, and cilantro with a small bowl and lightly season with salt and pepper. While preparing salmon, let it rest at room temperature (or gently warm in the microwave, you don’t like cold sauce on warm salmon).
What Should I Serve with this Salmon?
I love pairing this salmon with a multi-colored veggie blend.
I chopped 2 small zucchini, 1 yellow bell pepper, 1/2 medium red onion and tossed it with olive oil on a baking sheet, then roasted for 10 minutes at 425 o’clock. Then I tossed in a pint of grape tomatoes and 1 tablespoon of minced garlic and roasted for 10 minutes or so until the tomatoes began to burst.
