Ingredients
Streusel Crumb Topping:
- 2/3 cup all-purpose flour
- 1/3 cup light brown sugar
- ¼ tsp salt
- ¼ cup unsalted butter-melted
Strawberry Muffins:
- 1 cup all-purpose flour
- ¼ tsp salt
- 1 tsp baking powder
- ¼ cup vegetable oil
- ½ cup granulated sugar
- 1 large egg
- ½ tsp vanilla
- ½ cup Greek yogurt
- 1 ½ cup diced fresh strawberries
Cream Cheese Filling:
- 6 oz. cream cheese-room temperature
- 3 tbsp granulated sugar
- 1 tsp vanilla
- 1 tsp cornstarch
Glaze:
- ¾ cup powdered sugar
- 1 ½ –2 ½ tsp milk or creme
Instructions
- Heat the oven to 425 degrees Fahrenheit and place paper liners in a cupcake pan.
- This recipe makes 9-10 muffins.
For the crumb topping:
- Mix together flour, sugar, and salt.
- Add melted butter and stir with a fork until you have coarse crumbs. Set aside.
For the muffins:
- In a big bowl, mix together flour, baking powder, and salt. Set aside.
- In a medium bowl, whisk together egg and sugar until combined.
- Add yogurt, oil, and vanilla extract, and whisk until the mixture is pale and yellow.
- Gently combine the wet ingredients with the dry ingredients by hand.
- Use a rubber spatula to gently mix in diced strawberries. Keep 2-3 tablespoons aside for topping.
- For the cream cheese filling, combine softened cream cheese, sugar, cornstarch, and vanilla.
To assemble the muffins:
- Place 1 tablespoon of muffin mixture in each cup.
- Drop a little less than a full tablespoon of cream cheese mixture in the center of each muffin.
- Cover the cream cheese with more muffin batter, filling each cup about 2/3 to 3/4 full.

- Preheat the oven and then reduce the temperature to 350 degrees Fahrenheit. Bake for 22-25 minutes until the tops are golden brown and the center is set.

For the glaze:
- While the muffins cool, mix powdered sugar with milk or cream. Start with 1 teaspoon of liquid and add more until you reach the desired consistency.
