INGREDIENTS
- 1 1/2 cups flour
- 1/2 cup sugar
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter
- 1 large egg
- 1 tsp vanilla extract
STRAWBERRIES:
- 2 cups strawberries, chopped
- 1 tbsp lemon juice
- 1 tsp vanilla extract
- 1/4 cup sugar
- 1 tbsp cornstarch
INSTRUCTIONS
- Preheat your oven to 375 degrees and either grease an 8×8-inch pan or line it with parchment paper.
For the crust:
- In a bowl, mix together flour, sugar, baking powder, and salt.
- Use a fork to cut in the butter until the mixture becomes crumbly.
- Add the egg and vanilla, and mix well. If using a food processor, you can combine everything and pulse until crumbly. Then add the egg and vanilla, and process until mixed.
- Press half of the mixture into the prepared pan, saving the other half for later.
For the strawberries:
- Toss the strawberries with lemon juice and vanilla extract.
- Sprinkle sugar and cornstarch over the strawberries, tossing to coat.
- Spoon the strawberry mixture over the bottom crust, discarding any excess liquid. Sprinkle the reserved dough on top of the strawberries.
- Bake for 45 minutes or until the topping is lightly browned. Allow it to cool completely, then cut into bars. Store in the refrigerator, but serving closer to room temperature is recommended.
