I would have asked you to make these muffins if you had ever made a single recipe from my blog. They’re awesome! Super soft, fuzzy, thick, but not overly dense. They are everything and all but a homemade muffin you’d ever like.
A traditional Sunday meal at our house is breakfast for dinner. The rest of the time, they are muffins and scrambled eggs. I decided that muffins must be extra amazing to make up for it, because I really don’t eat dairy for now, because that would be the majority of my meal, with some additional fruit.
Thankfully, we had all the ingredients on our hands, as most of them are simple staples for the pantry. Even though I’m going to admit that the coconut milk was pretty delicious, you could put the milk in the recipe for any milk you prefer.
The Best Blueberry Muffins

Ingredients:
1 cup of coconut milk
1 tsp of apple cider vinegar
2 cups of all-purpose flour
2 1/2 tsp of baking powder
1/4 tsp of baking soda
1/2 tsp of salt
1/2 cup + 2 tbsp of white granulated sugar
1/4 cup + 2 tbsp of vegetable oil
1 tsp of vanilla extract
zest of 1 lemon
2 cups of fresh blueberries
