The Best Blueberry Muffins
Vegan or not, the perfect blueberry muffins I’ve ever made are these. Ideal for breakfast on a weekend, or a fast gran and go to a bust school and work.
Ingredients:
1 cup of coconut milk
1 tsp of apple cider vinegar
2 cups of all-purpose flour
2 1/2 tsp of baking powder
1/4 tsp of baking soda
1/2 tsp of salt
1/2 cup + 2 tbsp of white granulated sugar
1/4 cup + 2 tbsp of vegetable oil
1 tsp of vanilla extract
zest of 1 lemon
2 cups of fresh blueberries
Directions:
1. Preheat your oven to 375 degrees.
2. Line a muffin tin and set it aside with paper liners. Place the milk and apple cider vinegar in one bowl and set aside as you are preparing the dry ingredients.
3. Mix the flour, baking soda, baking powder, and salt together. Place the sugar, oil, vanilla, and lemon zest in the same bowl as the milk and vinegar. Add the dry ingredients to the wet ones. To not over mix, it’s perfect with a few lumps. Fold the blueberries gently into the mix using a silicone spatula,
4. Through each of the muffin liners pour 1/4 cup of batter. Bake for 25 mins till the center of the toothpick comes out clean.
