Vanilla Cake Recipe

Whether you’re celebrating a special event like a birthday, anniversary, or holiday, or simply want to brighten someone’s day or your own, this cake is a delightful choice. Sometimes, a delicious homemade cake is all you need to make any moment special!

Ingredients

  • 1 1/2 tsp baking powder
  • 3 cups all-purpose flour
  • 1/2 tsp baking soda
  • 2 whole large eggs
  • 2 whole egg whites
  • 1/2 tsp salt
  • 1 1/3 cups milk
  • 1 tablespoon real vanilla extract
  • 1/2 cup salted butter softened
  • 1/2 cup vegetable oil
  • 2 cups granulated sugar

Instructions:

1. Preheat your oven to 325 degrees Fahrenheit. Line your baking pan with parchment paper and/or generously grease it with nonstick cooking spray. Set it aside.

2. In a big bowl, whisk together the flour, baking powder, baking soda, and salt. Set this dry mixture aside.

3. In a liquid measuring cup, combine the milk and vanilla. Set it aside.

4. In another large bowl, blend the softened butter, vegetable oil, and sugar until they are well combined. Add the eggs and egg whites one by one, mixing until the mixture becomes light and fluffy. Scrape down the sides of the bowl and mix briefly once more.

5. Begin alternating the addition of the dry flour mixture with the milk and vanilla mixture, ensuring that you start and end with the flour mixture. Scrape down the sides of the bowl and mix again to create a smooth batter.

6. Divide the batter evenly between your prepared baking pans and smooth the tops. Bake in the lower two-thirds of your oven for approximately 30-40 minutes. The cakes are ready when a toothpick inserted comes out clean or with just a few moist crumbs.

7. Allow the cakes to cool in their pans for 15-20 minutes before attempting to remove them onto cooling racks. Let them cool completely before frosting and decorating as desired.

Notes

You can choose how you’d like to bake this cake recipe:

– For a 9×13-inch thick cake, bake it for 40-55 minutes.
– If you prefer 8 or 9-inch round cakes, they will need approximately 40-50 minutes in the oven.
– If you’re making cupcakes, bake them for about 18-20 minutes.

Regardless of the method you choose, it’s important to use lighter-colored baking pans or glass pans. Using darker, nonstick pans can result in darker and potentially crispier edges, which might not be ideal for a classic vanilla cake. Enjoy your baking!
