Ingredient Notes

  • Plain flour: Forms the structure of the pastry, creating a crisp, tender tart shell when baked.
  • Butter (chilled and diced): Gives the pastry richness and flakiness; using it cold helps create that delicate, crumbly shortcrust texture.
  • Egg (medium): Binds the pastry dough, adds richness, and helps create a golden, cohesive shell.
  • Vanilla pod seeds (optional): Add delicate, aromatic sweetness and depth of flavor to the pastry, enhancing the overall taste.
  • Jam / fruit curd / marmalade: These are the star fillings—sweet, fruity, and vibrant. They add both color and contrasting texture to the crisp pastry.
  • Extra flour (for dusting): Prevents the dough from sticking while rolling, ensuring clean handling and shaping.
  • Extra butter (for tin): Greases the tart tin to prevent sticking and helps the pastry release easily after baking.

Tips for the Best Jam Tarts

  • Use Cold Butter in the Dough: Helps achieve that classic flaky pastry texture.
  • Don’t Overfill with Jam: A small spoonful is enough—jam bubbles and spreads as it bakes.
  • Chill the Dough: Let the dough rest in the fridge before rolling for best results.
  • Use a Muffin Tin or Tart Pan: Helps the tarts keep their shape while baking.
  • Cool Before Serving: Jam centers are molten straight out of the oven; let them set for a neater bite.

  • seeds scraped optional
  • 100 grams jam fruit curd or marmalade of your choice

  • Fill each pastry case with 1–2 teaspoons of your favorite filling. Add little pastry hearts on top if you’d like!

  • Let them cool in the tin for a few minutes, then move to a wire rack to cool completely.
  • Done and ready to enjoy! 🧁💛

Want to skip a step? Go ahead and use ready-made shortcrust pastry! Just grab a block instead of the ready-rolled kind—it’s much easier to roll it out to the perfect thickness yourself. 🧁⏱️
