Serves: 10 slices
Ingredients
For the Bread:
- 2 1/2 cups of all-purpose flour (please refer to the post for specific notes on measuring)
- 1/2 teaspoon of baking soda
- 1/2 teaspoon of baking powder
- 1/2 teaspoon of salt
- 2 teaspoons of cinnamon
- 4 tablespoons of melted butter, cooled
- 3/4 cup of sugar
- 3 beaten eggs
- 1 cup of yogurt
- 2 teaspoons of vanilla extract
- 2 cups of peeled and diced apples (approximately two small apples)
For the Streusel Topping:
- 1 tablespoon of butter
- 1/4 cup of packed light brown sugar
- 1/4 cup of quick-cooking oats
- 1/2 teaspoon of cinnamon
Instructions
- Preheat your oven to 350 degrees and grease a 9-inch bread pan with cooking spray.
- In a big bowl, mix together the flour, salt, cinnamon, baking soda, and baking powder.
- In another medium-sized bowl, mix the eggs, butter, yogurt, sugar, and vanilla.
- Combine the wet ingredients with the dry ones, but don’t mix too much. Then, add the diced apples. Pour this mixture into the greased bread pan.
- For the topping, mix together butter, brown sugar, oats, and cinnamon in a small bowl. You can use a pastry cutter or a fork. Sprinkle this mixture over the unbaked bread.
- Bake the bread in the oven for about 60 minutes or until a toothpick stuck in the middle comes out with just a few crumbs.
- After 10 minutes, take the bread out of the pan and put it on a cooling rack. Let it cool completely before wrapping it tightly in plastic wrap.
