Why This Balsamic Chicken Is the Best

  • Bold, Balanced Flavor: Balsamic vinegar adds tangy richness balanced by herbs and garlic.
  • Tender & Juicy: The marinade helps lock in moisture.
  • Beautiful Grill Marks: Grilled until perfectly browned and slightly charred.
  • Versatile Dish: Works with chicken breasts, thighs, or drumsticks.
  • Great for Meal Prep: Tastes even better the next day!

Perfect for Any Occasion

Whether it’s a sunny summer dinner or a cozy indoor meal, Balsamic Chicken fits right in. Serve it hot off the grill or cold in a salad—it’s flavorful, healthy, and sure to please.

Ingredient Notes

  • Balsamic Vinegar: Rich, tangy, and slightly sweet, it serves as the flavor backbone of the marinade, tenderizing the chicken while infusing it with deep complexity.
  • Olive Oil: Smooth and fruity, it balances the acidity of the vinegar and helps keep the chicken moist and juicy.
  • Minced Garlic: Sharp and aromatic, it adds bold depth and savory flavor to every bite.
  • Fresh Rosemary (or Dried): Woody and fragrant, it brings a rustic, earthy note to the marinade.
  • Fresh Thyme (or Dried): Subtle and slightly minty, thyme adds complexity without overpowering the dish.
  • Dijon Mustard: Creamy and tangy, it acts as an emulsifier and delivers a zesty kick that complements the vinegar.
  • Salt & Freshly Ground Black Pepper: Classic seasoning essentials that enhance all the marinade’s layers of flavor.
  • Boneless Skinless Chicken Thighs (or Breasts): Tender and juicy, they soak up the balsamic marinade beautifully and cook quickly for a perfect weeknight dinner.
  • Chopped Fresh Parsley (Optional): A vibrant, fresh garnish that adds color and a hint of herbal brightness just before serving.

Tips for Making the Best Balsamic Chicken

  • Marinate at Least 30 Minutes: Or up to 8 hours for deeper flavor.
  • Use Fresh Garlic and Herbs: They make a big difference in taste.
  • Pound Chicken Evenly: Ensures even cooking.
  • Grill Over Medium-High Heat: For a nice sear without drying it out.
  • Let It Rest Before Slicing: Locks in all those flavorful juices.

Serving Suggestions

  • With Roasted Veggies or Grilled Asparagus: Light and fresh.
  • Over Rice or Quinoa: To soak up the flavorful juices.
  • In a Salad: Slice it over greens with extra balsamic vinaigrette.
  • With Garlic Bread or Potatoes: Hearty and satisfying.

Ingredients

  • 2 lbs. boneless skinless chicken thighs or breasts
  • 1/3 cup balsamic vinegar
  • 1/4 cup olive oil
  • 1 tablespoon minced garlic 3 cloves
  • 2 teaspoon minced fresh rosemary
  • 2 teaspoon minced fresh thyme
  • 2 teaspoon dijon mustard
  • 1 tsp each salt and freshly ground black pepper
  • 1 tablespoon chopped fresh parsley optional

Instructions

  • Place the chicken in a large resealable bag (or just use a bowl if that’s easier).
  • In a separate mixing bowl, whisk together the balsamic vinegar, olive oil, garlic, rosemary, thyme, Dijon mustard, salt, and pepper until it’s well combined.
  • Pour that flavorful marinade over the chicken in the bag or bowl. If you’re using a bag, seal it up and press out as much air as you can.
  • Gently rub the marinade all over the chicken. (A little trick: twist and tie the top of the bag so the marinade really hugs the chicken!)
  • Pop the marinating chicken into the fridge—let it soak up all that flavor! For chicken breasts, give it 2 to 8 hours. For thighs, anywhere from 2 to 24 hours works great.
  • When you’re ready to cook, preheat your grill over medium-high heat to about 400°F.
  • While it’s heating up, take a minute to clean and oil the grill grates. Just grab some tongs and a balled-up paper towel dipped in a bit of vegetable or olive oil—easy!
  • Take the chicken out of the marinade, letting any extra drip off back into the bag. Place the chicken on the hot grill and cook, covered, for about 5 to 8 minutes per side.
  • Keep an eye on the thickness—cooking times can vary! Make sure the thickest part reaches 165°F for perfectly cooked chicken.
  • If you’d like, sprinkle on some fresh parsley for a pop of color. Serve warm and enjoy! 🌿🔥🍗
