Ingredients

  • 2 lbs. boneless skinless chicken thighs or breasts
  • 1/3 cup balsamic vinegar
  • 1/4 cup olive oil
  • 1 tablespoon minced garlic 3 cloves
  • 2 teaspoon minced fresh rosemary
  • 2 teaspoon minced fresh thyme
  • 2 teaspoon dijon mustard
  • 1 tsp each salt and freshly ground black pepper
  • 1 tablespoon chopped fresh parsley optional

Instructions

  • Place the chicken in a large resealable bag (or just use a bowl if that’s easier).
  • In a separate mixing bowl, whisk together the balsamic vinegar, olive oil, garlic, rosemary, thyme, Dijon mustard, salt, and pepper until it’s well combined.
  • Pour that flavorful marinade over the chicken in the bag or bowl. If you’re using a bag, seal it up and press out as much air as you can.
  • Gently rub the marinade all over the chicken. (A little trick: twist and tie the top of the bag so the marinade really hugs the chicken!)
  • Pop the marinating chicken into the fridge—let it soak up all that flavor! For chicken breasts, give it 2 to 8 hours. For thighs, anywhere from 2 to 24 hours works great.
  • When you’re ready to cook, preheat your grill over medium-high heat to about 400°F.
  • While it’s heating up, take a minute to clean and oil the grill grates. Just grab some tongs and a balled-up paper towel dipped in a bit of vegetable or olive oil—easy!
  • Take the chicken out of the marinade, letting any extra drip off back into the bag. Place the chicken on the hot grill and cook, covered, for about 5 to 8 minutes per side.
  • Keep an eye on the thickness—cooking times can vary! Make sure the thickest part reaches 165°F for perfectly cooked chicken.
  • If you’d like, sprinkle on some fresh parsley for a pop of color. Serve warm and enjoy! 🌿🔥🍗
