Place the chicken in a large resealable bag (or just use a bowl if that’s easier).
In a separate mixing bowl, whisk together the balsamic vinegar, olive oil, garlic, rosemary, thyme, Dijon mustard, salt, and pepper until it’s well combined.
Pour that flavorful marinade over the chicken in the bag or bowl. If you’re using a bag, seal it up and press out as much air as you can.
Gently rub the marinade all over the chicken. (A little trick: twist and tie the top of the bag so the marinade really hugs the chicken!)
Pop the marinating chicken into the fridge—let it soak up all that flavor! For chicken breasts, give it 2 to 8 hours. For thighs, anywhere from 2 to 24 hours works great.
When you’re ready to cook, preheat your grill over medium-high heat to about 400°F.
While it’s heating up, take a minute to clean and oil the grill grates. Just grab some tongs and a balled-up paper towel dipped in a bit of vegetable or olive oil—easy!
Take the chicken out of the marinade, letting any extra drip off back into the bag. Place the chicken on the hot grill and cook, covered, for about 5 to 8 minutes per side.
Keep an eye on the thickness—cooking times can vary! Make sure the thickest part reaches 165°F for perfectly cooked chicken.
