Banana Cake
This simple banana cake is sweet, super moist, soft, and just perfect!

Ingredients
Cake:
- 4 medium bananas
- ½ cup (100 grams) granulated sugar
- ¼ cup (50 grams) light brown sugar
- ½ cup (113 grams) unsalted butter, room temperature
- 3 large eggs, room temperature
- 1 tsp (5 ml) pure vanilla extract
- 1 ½ cups (360 ml) milk, room temperature
- 3 cups (360 grams) all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- ½ tsp ground cinnamon
- ⅛ tsp ground cloves
- ½ tsp salt
Cream Cheese Frosting:
- 8 ounces (225 grams) cream cheese
- 2 ½ cups (300 grams) powdered sugar
- 1 tsp pure vanilla extract
Instructions
- Use a fork to mash the bananas in a mixing bowl until it’s smooth like a puree.
- Add sugar, butter, eggs, and vanilla to the mashed bananas.
- Use a hand mixer or a stand mixer to whisk everything together.
- Pour in the milk and mix it in.
- Add the dry ingredients to the banana mixture and gently whisk until they are just combined. Don’t mix too much.
- Grease two 8-inch pans and pour the batter evenly into them.
- Bake at 350°F (180°C) for around 25 minutes or until a toothpick comes out clean from the center of the cake.
- Take the cakes out of the oven and let them cool completely before frosting.
Cream Cheese Frosting
- With a hand or stand mixer, beat together the cream cheese, sugar, and vanilla extract.
- If the mixture is too thick, add 1 teaspoon of milk and beat again until smooth.
- Frost the cake, slice it, and it’s ready to serve!
Notes:
- This cake freezes well. To thaw, place it in the fridge overnight.
- Once thawed, frost the cake and it’s ready to be served.
