Banana Cake

Banana Cake

This simple banana cake is sweet, super moist, soft, and just perfect!

Cook Time: 25 minutes

Ingredients

Cake:

  • 4 medium bananas
  • ½ cup (100 grams) granulated sugar
  • ¼ cup (50 grams) light brown sugar
  • ½ cup (113 grams) unsalted butter, room temperature
  • 3 large eggs, room temperature
  • 1 tsp (5 ml) pure vanilla extract
  • 1 ½ cups (360 ml) milk, room temperature
  • 3 cups (360 grams) all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp ground cinnamon
  • ⅛ tsp ground cloves
  • ½ tsp salt

Cream Cheese Frosting:

  • 8 ounces (225 grams) cream cheese
  • 2 ½ cups (300 grams) powdered sugar
  • 1 tsp pure vanilla extract

Instructions

  1. Use a fork to mash the bananas in a mixing bowl until it’s smooth like a puree.
  2. Add sugar, butter, eggs, and vanilla to the mashed bananas.
  3. Use a hand mixer or a stand mixer to whisk everything together.
  4. Pour in the milk and mix it in.
  5. Add the dry ingredients to the banana mixture and gently whisk until they are just combined. Don’t mix too much.
  6. Grease two 8-inch pans and pour the batter evenly into them.
  7. Bake at 350°F (180°C) for around 25 minutes or until a toothpick comes out clean from the center of the cake.
  8. Take the cakes out of the oven and let them cool completely before frosting.

Cream Cheese Frosting

  1. With a hand or stand mixer, beat together the cream cheese, sugar, and vanilla extract.
  2. If the mixture is too thick, add 1 teaspoon of milk and beat again until smooth.
  3. Frost the cake, slice it, and it’s ready to serve!

Notes:

  • This cake freezes well. To thaw, place it in the fridge overnight.
  • Once thawed, frost the cake and it’s ready to be served.
