Banoffee Pie Recipe

Ingredients
For the crust
1 Cup of Soaked almonds
1/4 Cup of Water
1 cup of Oat flour
4 Tbsp of Maple syrup
Pinch of salt
For the date caramel
1 Cup of Dates
4 Tbsp of Plant-based milk or water
For the banana layer
2 Bananas
1 Tbsp Lemon juice (optional)
For the whipped cream
1 of Can Full fat coconut milk (previously chilled)
1 Tsp of Vanilla extract
2 Tbsp of Maple syrup (optional)
Instructions
1. Preheat up to 180 ° C in your oven.
2. Add your soaked almonds with water into a food processor and combine until fairly smooth.
3. Place the almond mixture in a bowl and add the salt, maple syrup, and oatmeal. Blend and, if required, add more oat flour. When it forms a sticky ball, it is ready.
4. In a pie tin, place the dough and press it with your hand or with flat glass. Thinly cover the entire pie with dough and ensure it is evenly leveled.
5. Bake the crust for 25 minutes or until the crust is golden brown.
6. Toss pitted dates and plant-based milk or water in a food processor and blend until smooth. When needed, add more liquid. Just set aside.
7. Open the chilled coconut milk can and remove any excess water. Add the vanilla extract, maple syrup, coconut cream (solid part), and whisk in a bowl for 5 minutes or until sweet and fluffy. Just set aside.
8. Peel the bananas and slice them. Cover to prevent browning with lemon juice.
9. Allow cooling for at least 30min before assembling when the crust is ready.
10. Begin by layering the cooled crust with a generous amount of date caramel. On top, add the sliced banana and cover it with whipped cream.
