I’ve been hanging around with a whole stash of bananas, so I’ve already done it a few times and I’m fascinated with it. It’s sugar-free, butter-free, oil-free, and completely addictive.
This healthy banoffee pie is made with oatmeal and a crust of almonds, a smooth layer of date caramel, sliced bananas, and a healthy amount of whipped coconut cream.
The crust is crisp and nutty. The layer of date caramel gives the pie the right amount of gooeyness and sweetness. A layer of bananas and a cloud of whipped coconut cream with a hint of vanilla to top it off! Isn’t that perfect?!
I decided to leave the whipped coconut cream unsweetened because the pie is already quite sweet. You could add a dash of maple or a sweetener of your choice.
Of course, you can modify this banoffee pie, no matter your heart’s desire! If you like more bananas or more caramel, don’t be shy! It’s just going to make it better.
Believe me, this taste is far better than it seems to be.
The amount you want to make a bigger pie can be doubled, or even go for individual sizes! For any occasion, this healthy Banoffee Pie is perfect. And a bonus, it’s totally approved for kids!

1 Cup of Soaked almonds
1/4 Cup of Water
1 cup of Oat flour
4 Tbsp of Maple syrup
Pinch of salt
For the date caramel
1 Cup of Dates
4 Tbsp of Plant-based milk or water
For the banana layer
2 Bananas
1 Tbsp Lemon juice (optional)
For the whipped cream
1 of Can Full fat coconut milk (previously chilled)
1 Tsp of Vanilla extract
2 Tbsp of Maple syrup (optional)
