Ingredient Notes

  • Homemade Refried Beans (2 cups): Creamy, seasoned beans that form the hearty, flavorful base of the burrito. They add protein, texture, and that classic comfort-food feel.
  • Large Flour Tortillas (6, at least 12 inches): Soft, pliable wraps big enough to hold all the delicious fillings without tearing. They crisp up beautifully when grilled or toasted.
  • Monterey Jack Cheese (2 cups, shredded): Mild and creamy with excellent meltability, this cheese brings a gooey, cheesy layer that pairs perfectly with the beans.
  • Chipotle Salsa: Smoky and slightly spicy, this salsa adds bold flavor and a bit of heat to balance the richness of the beans and cheese.
  • Guacamole: Creamy, fresh, and cool, guacamole adds a bright, buttery contrast to the warm burrito filling.
  • Sour Cream: Smooth and tangy, it cools down the spice and brings a luscious finish to each bite.

Tips for Making the Best Bean and Cheese Burritos

  • Warm the Tortillas First: This keeps them soft and prevents cracking when rolling.
  • Season the Beans: A pinch of cumin, garlic powder, or chili powder elevates canned refried beans.
  • Don’t Overstuff: Keep the filling centered and balanced to make folding and rolling easier.
  • Bake or Pan-Sear After Rolling: Toast them until golden brown for extra flavor and texture.
  • Wrap in Foil for On-the-Go or Freezing: Keeps them fresh and makes them easy to grab and reheat.

Serving Suggestions

  • With Sour Cream and Guacamole: Cool, creamy dips like sour cream and guac perfectly balance the warm, savory burrito.
  • With a Side of Salsa or Pico de Gallo: A spoonful of fresh salsa or zesty pico adds brightness and a kick of flavor.
  • Alongside Mexican Rice or Cilantro Lime Rice: Turn your burrito into a full meal by pairing it with a vibrant rice dish.
  • With Roasted Veggies or Corn Salad: Add some roasted bell peppers, onions, or a tangy corn salad for texture and nutrition.
  • Topped Like Enchiladas: Pour red or green enchilada sauce over the burritos, sprinkle with extra cheese, and bake until bubbly for a next-level twist.
  • As a Party Platter: Slice into smaller portions and serve with dipping sauces for an easy crowd-pleaser at gatherings.

Ingredients

  • 2 cups homemade refried beans
  • 6 large flour tortillas at least 12 inches in diameter
  • 2 cups shredded monterey jack cheese
  • chipotle salsa
  • sour cream
  • guacamole

Instructions

  • Warm up your homemade beans in a skillet over low heat—just enough to get them nice and cozy.
  • Next, give your tortilla a little char by holding it over an open flame for a few seconds. It adds great flavor and a bit of toasty goodness! 🔥
  • Lay one tortilla flat on a clean surface. Spread about ⅓ cup of those warm beans right in the center, then sprinkle ⅓ cup of shredded cheese on top. Yum! 🧀
  • Now for the fun part—folding! Start by folding the left and right sides of the tortilla toward the center, just enough to cover part of the filling. This will help keep everything snug inside.
  • Then, take the bottom edge (closest to you) and fold it up over the filling. Tuck it in tightly, and start rolling the burrito away from you. Keep those sides folded in as you go, and roll until it’s completely sealed up.
  • Place your burrito seam side down on a baking sheet, and repeat with the rest of the tortillas.
  • If you want your burritos extra tasty, crisp up the outside! Heat a skillet, braiser, or Dutch oven over medium-high heat.
  • Place the burritos seam side down in the hot pan and cook for 2–3 minutes per side. You're looking for a sealed edge, melty cheese, warm fillings, and a light golden crisp where the tortilla touches the pan. Perfection!

Notes

If you’re feeling adventurous, go ahead and try unrolling the tortilla to add some guacamole—why not! But if not, no worries—just serve your bean and cheese burrito right away with your favorite toppings and dig in! 🥑🌯✨
