Ingredients

  • 2 cups homemade refried beans
  • 6 large flour tortillas at least 12 inches in diameter
  • 2 cups shredded monterey jack cheese
  • chipotle salsa
  • sour cream
  • guacamole

Instructions

  • Warm up your homemade beans in a skillet over low heat—just enough to get them nice and cozy.
  • Next, give your tortilla a little char by holding it over an open flame for a few seconds. It adds great flavor and a bit of toasty goodness! 🔥
  • Lay one tortilla flat on a clean surface. Spread about ⅓ cup of those warm beans right in the center, then sprinkle ⅓ cup of shredded cheese on top. Yum! 🧀
  • Now for the fun part—folding! Start by folding the left and right sides of the tortilla toward the center, just enough to cover part of the filling. This will help keep everything snug inside.
  • Then, take the bottom edge (closest to you) and fold it up over the filling. Tuck it in tightly, and start rolling the burrito away from you. Keep those sides folded in as you go, and roll until it’s completely sealed up.
  • Place your burrito seam side down on a baking sheet, and repeat with the rest of the tortillas.
  • If you want your burritos extra tasty, crisp up the outside! Heat a skillet, braiser, or Dutch oven over medium-high heat.
  • Place the burritos seam side down in the hot pan and cook for 2–3 minutes per side. You're looking for a sealed edge, melty cheese, warm fillings, and a light golden crisp where the tortilla touches the pan. Perfection!
