TIPS FOR GREEK CHICKEN
For this recipe, I absolutely adore using bone-in skin-on chicken thighs because they’re insanely delicious and don’t dry out in the oven. Also, if you would like, you might use chicken drumsticks or bone-in, skin-on chicken breasts. It will take longer for the bone-in chicken breasts to cook than for the chicken thighs, so keep it in mind.
Before adding the chicken and the potatoes, you could reserve a tablespoon or two of the marinade if you want, then drizzle the reserved marinade over the cooked dish for added flavor. This dish is excellent for creating meals; it could be kept for up to 4 days in the fridge.
