Ingredients
- 2 chicken breasts cut into bite-size pieces
- 75 gram 2.6 oz chorizo cut into small chunks
- 200 gram 7 oz dried pasta shapes
- 400 gram 14 oz tin chopped tomatoes
- 480 ml 2 cups chicken stock
- 80 ml 1/3 cup double (heavy) cream
- 1 tablespoon olive oil
- 1 onion peeled and chopped
- 1 ½ tablespoon Cajun seasoning
- 2 cloves garlic peeled and minced
- ½ red bell pepper deseeded and sliced
- ½ green bell pepper deseeded and sliced
- ½ yellow bell pepper deseeded and sliced
- large handful of fresh spinach
- 10 fresh cherry tomatoes sliced in half
- 50 gram 1/2 cup grated cheddar cheese
- 2 tablespoon freshly chopped parsley
Instructions
- Heat the oil in a large skillet over medium heat. Add the onion and cook, stirring occasionally, for about 5 minutes, or until the onion starts to soften.
- Coat the chopped chicken breast with Cajun seasoning, then add it to the pan with the onion. Cook for 5-6 minutes, stirring occasionally, until the chicken is browned on all sides.
- Stir in the chorizo and garlic, frying for another 2 minutes until the chorizo begins to release its oils. Then add the peppers and mix well. Add the pasta, canned tomatoes, and chicken stock.
