Just like my childhood in a loaf, a little about the two of these combined tastes like that. It’s almost like sweet, delish, healthy banana bread made with ripe bananas and plump raisins and walnuts packed with fresh carrot cake. A healthier twist on the classic recipe for banana bread and the classical recipe for carrot cake is this recipe.
Baking with coconut oil
If you didn’t realize that my preferred way to make something sweet is to cook with coconut oil. Actually, it’s the only oil I use when baking, as it could be fragrant and subtly sweet for baking. But that can be entirely tasteless as well!
When so many coconut oils solidify at room temperature, after being entirely melted, you’ll want to measure it. I also buy liquid coconut oil sometimes, so that at room temperature it stays liquid and is easier to measure.
My major note for working with coconut oil that’s not always room temperature: bring to room temperature all your other ingredients. If you try to whisk your coconut oil right out of the fridge with the eggs, it will solidify and clump. I’ve brought my eggs to room temperature, put them in the oven for around five minutes, and they’re starting to heat up.
The same thing should be said for any other ingredient that you would use directly from the fridge!

INGREDIENTS
2 medium overripe bananas, mashed
1/2 cup of melted coconut oil
1 tsp of vanilla
2 eggs, whisked
1/3 cup of honey
1 1/2 cups of white whole wheat flour
1 tsp of baking soda
1/2 tsp of cinnamon
1/2 tsp of salt
1/4 tsp of nutmeg
1 cup of grated carrots
1/2 cup of raisins
1/2 cup of chopped walnuts or pecans
Vegan Cashew Cream Cheese
1.5 cup of raw cashews, soaked overnight or in hot water for at least 2 hours
3 Tbsp of maple syrup
1/2 cup of filtered water
1 tsp of vanilla
Pinch of salt
