Chicken Noodle Soup
Chicken Noodle Soup is a big favorite! With lots of fresh vegetables, rich, tasty broth and tender chicken pieces are blended and completed with egg noodles.

Ingredients
1 tablespoon of olive oil
1 onion of diced
2 large of carrots diced
2 large of celery ribs sliced
1 red pepper finely diced
1 teaspoon of poultry seasoning
pepper to taste
1 bay leaf
2 cups of chopped cooked chicken
6 cups of chicken broth I prefer homemade
6 oz. egg noodles
1 cup of broccoli florets
2-3 tablespoons of fresh parsley
Instructions
1. In a medium-high-heat pot, heat the olive oil.
2. The onion is chopped and added to the pot. Except for the broccoli, keep adding vegetables to the pot in order as you chop them. Cook for five min, or till onion is softened.
3. Combine the seasoning, broth, and chicken in a mixing bowl. Bring to a boil, then add the noodles and cook until they are tender approximately 5 minutes. During the last two mins of cooking, add the broccoli.
4. Remove the bay leaf before having to serve and stir in the parsley.
Notes
If more broth is preferred, you could even add 8 cups.
