You need to use desiccated coconut for this one. It’s a little different from shredded coconut–finely shredded coconut that is not sweetened. Go ahead and then use regular shredded coconut if you’re not using this one. That’s OK. I’d personally pulse coconut a few times in a blender, however with texture, I’m a little bit picky.
The Coconut Balls of Chocolate are no-bake, though. All you have to do is melt a little chocolate, which in this delicious recipe is as hard as ‘baking’. Even though this recipe is pretty easy, dipping each ball in the chocolate will require a little patience. Well, it’s worth the effort, trust me!

INGREDIENTS
1 3/4 cup of desiccated coconut
1 3/4 cup of powdered sugar
1/2 cup of sweetened condensed milk
2 cups of dark or semi-sweet chocolate chips
2 Tbsp of shortening
INSTRUCTIONS
1. Combine the confectioners’ sugar with the coconut and condensed milk in a large bowl.
2. Shape the mixture into 1-inch balls and put the mixture on a wax paper-lined pan. Place until firm, in the refrigerator.
3. Melt the chocolate chips with shortening in a microwave-safe glass bowl, removing them to stir just once twice till smooth.
4. Dip every other ball into the chocolate to allow it to drip off the excess chocolate.
5. Put on the waxed paper with the chocolate balls; let stand until set. Store it in the refrigerator
