Making these cupcakes is super easy, and I do it all in one big bowl. While not needed, because I’m lazy so I’ll get that big ole appliance to work, I prefer to do this in my stand mixer! However, in a big mixing bowl with a hand mixer, you could do this.
A couple of times I have teased these QUITE cupcakes, and I’m sorry for that, but here they are in their CHOCOLATEY GOODNESS!
I wish I could explain to you how extremely fluffy and delicious these cupcakes are, but you’ll have to make yourself aware of them.
CUPCAKE FROSTING: For those cupcakes, I used chocolate vegan buttercream frosting, and I highly advise it! In order to be more cake than frosting, I loved cupcakes, so I typically placed them on a single simple layer.

INGREDIENTS
2 ½ cups of all-purpose flour
1 3/4 cups of organic cane sugar or maybe granulated sugar
3/4 cup of cocoa powder
1 teaspoon of baking powder
1 teaspoon of baking soda
1 teaspoon of salt
1 teaspoon of espresso powder
⅔ cup of melted coconut oil get unrefined if you prefer it to be virtually tasteless, vegetable or canola oil also good
1 ½ tablespoon of apple cider vinegar
1 teaspoon of vanilla
½ teaspoon of almond extract
1 1/2 cups of milk, any kind works here at room temperature
½ cup of apple sauce unsweetened, at room temperature
