The magic of this Cinnamon Bread is in its layers. Each bite reveals a soft, tender crumb with warm ribbons of cinnamon sugar, and the vanilla icing adds a decadent touch that melts in your mouth. It’s an easy recipe that looks and tastes impressive, making it ideal for gatherings or a special treat just for you.

The Magic of Vanilla Icing

Adding vanilla icing to cinnamon bread takes it from tasty to extraordinary. The creamy, subtly sweet icing pairs perfectly with the warm, spiced bread, making each slice a little indulgence. It adds a glossy, elegant touch and a burst of flavor that makes the bread feel extra special.

Why Homemade is Best

Baking cinnamon bread at home gives you control over every detail, from the quality of ingredients to the dough’s texture. This ensures a freshness and flavor that store-bought bread just can’t match. Plus, making bread from scratch can be a fun and rewarding experience, with a delicious treat as the end result.

The Joy of Sharing

Homemade cinnamon bread with vanilla icing is perfect for bringing people together. Whether it’s for a family brunch, a thoughtful gift, or a treat to enjoy with loved ones, it’s a great way to create connections and make memories. Food is more than just nourishment; it’s about sharing and enjoying moments with others.

Tips for the best Bread:

  • Don’t overbake! Check the center of the bread with a toothpick. As soon as it comes out clean, without any raw batter, take the bread out of the oven.
  • No buttermilk? You can use a buttermilk substitute.
  • This bread is best served warm when it’s extra soft and flavorful.
  • For an extra treat, top it with salted butter, cinnamon honey butter, or maple butter.

Can You Freeze Cinnamon Bread?

Yes, this bread freezes wonderfully. Wrap each slice in plastic wrap and place them in freezer bags. They’ll stay good in the freezer for up to 2 months. When you’re ready to enjoy, simply thaw and warm the slices before serving.

Cinnamon Bread

Warm up with a slice of homemade cinnamon bread topped with sweet icing. Moist, comforting, and perfectly spiced – a delightful treat for any time of day!

Prep Time: 20 minutes
Cook Time: 40 minutes
Total Time: 1 hour
Servings: 10

Ingredients

Cinnamon filling:

  • 2 tbsp granulated sugar
  • 1 ¾ tsp ground cinnamon

Bread:

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ¼ cup unsalted butter, melted
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp pure vanilla extract
  • 1 cup buttermilk

Cinnamon topping:

  • 2 tbsp granulated sugar
  • ¼ tsp ground cinnamon

Glaze:

  • ⅓ cup powdered sugar
  • 1 tsp cream, half & half or milk
  • drop vanilla extract

Instructions

Cinnamon filling:

  1. Combine 2 tbsp granulated sugar and 1 ¾ tsp cinnamon. Set aside.

Bread:

  1. Preheat the oven to 350°F. Combine the flour, baking powder, baking soda, and salt in a bowl and set aside.
  2. In a large bowl, whisk together the melted butter, 1 cup of sugar, egg, and vanilla until well combined. Add half of the flour mixture and stir with a rubber spatula until almost fully combined. Stir in the buttermilk, then add the remaining flour mixture and stir until just combined.
  3. Pour one-third of the batter into a greased 9×5 inch loaf pan and spread it into an even layer. Sprinkle half of the reserved cinnamon filling on top. Add half of the remaining batter, followed by the rest of the cinnamon filling, then the remaining batter. Tip: Dollop the batter around the pan, then use the back of a small knife to gently spread it into an even layer. Each layer will look quite thin, but it will puff up as it bakes.
  4. Combine 2 tbsp of sugar and ¼ tsp of cinnamon for the topping. Sprinkle it on top of the batter.
  5. Bake for about 45-50 mins, or until a toothpick inserted into the center comes out clean. Be careful not to overbake. Place the loaf pan on a cooling rack for 15 minutes, then remove the bread from the pan and place it directly on the rack to cool completely. Running a thin, sharp knife around the edges can help release the bread from the pan.

Glaze:

  1. Whisk the glaze ingredients until smooth and combined. Adjust the consistency of the glaze by adding more powdered sugar to thicken it or more milk to thin it. Drizzle the glaze over the cooled bread.

Notes

  • If using a different size pan, adjust the bake time as needed. Be careful not to overbake—check the center with a toothpick and pull the bread from the oven as soon as it’s cooked through.
