Ingredients
- 2 sticks of celery chopped finely
- 1/2 medium onion chopped
- 2 medium carrots peeled & chopped finely
- 1 tbsp olive oil
- 1 tbsp butter
- 3 cloves garlic minced
- 4 cups chicken broth
- 1/4 cup flour
- 1.5 pounds of uncooked chicken breasts
- 1/4 tsp Italian seasoning
- 2 generous cups of uncooked egg noodles
- 1 cup heavy/whipping cream
- Salt & pepper to taste
- 1 tbsp fresh parsley chopped
Instructions
- In a large soup pot, sauté celery, carrots, and onion in butter and oil over medium-high heat for 5 minutes.
- Stir in the garlic and cook for about 30 seconds.
- Add flour to the pot and cook for about a minute.
- Pour in the chicken broth and stir until the flour has dissolved. Add chicken, Italian seasoning, and cream. Increase the heat to high, bringing the soup to a slight boil. Cover the pot with the lid slightly open.
- Reduce the heat to a gentle simmer and let it cook for 10 minutes.
- Stir in the noodles, cover the pot again (lid slightly open), and cook for an additional 10 minutes. Stir halfway through to prevent the noodles from sticking.
- Remove the chicken from the pot, cut it up, and add it back in. Season the soup with salt and pepper to taste, and stir in the fresh parsley.
- Serve the creamy chicken noodle soup immediately.
