What is a vegan recipe for a cheesecake made of?
Interestingly enough, this is a cheeseless cheesecake, essentially. However, there is vegan cream cheese and this is what I use in this recipe, along with silken tofu, full-fat coconut milk, cashews, and other yummy ingredients.

To create a vegan tofu cheesecake recipe, would you need silken tofu?
I liked creating cheesecake recipes for silken tofu because it adds consistency and texture to silky smooth tofu. It’s also a readily available ingredient, so I can pick it at my local grocery store.

Can I use a chocolate topping?
I suggest a simple chocolate ganache if you would like to have a chocolate topping on your vegetarian cheesecake. Mix 1 cup of dairy-free chocolate chips, like a rich creamer, with half a cup of vegan cream. Together with the cream, melt the chocolate and then stir until everything is mixed.
After you have finished and cooled your vegan cashew cheesecake recipe for around 15-20 minutes, top with the chocolate sauce.

Ingredients

GRAHAM CRACKER CRUST
1½ cups of Graham Crackers 1 packet
2 tablespoons of coconut oil

VEGAN CHEESECAKE FILLING
½ cup of raw cashews
15 oz of full-fat coconut milk
2 8 oz of containers vegan cream cheese (I used Tofutti’s)
1 cup of granulated sugar
2 tablespoons of cornstarch
¼ cup of all-purpose flour
1 tablespoon of vanilla

CHERRY SAUCE
16 ounces of cherries (frozen or fresh, pitted)
1/2 cup of granulated sugar
1/2 cup of water
1 tablespoon of cornstarch
1 tablespoon of lemon juice (fresh)
