CHOCOLATE PANCAKES
The best choice for a chocolate lover to start their day is with these fluffy chocolate pancakes! Thick and full of melted chocolate for each bite, you get a valid reason to get out of bed in the morning with this simple recipe.
INGREDIENTS
1 ¼ cup of plant milk
1 ¼ cup of (sparkling) water
1 ¼ cup of buckwheat flour
2 tbsp of chia seeds
1 tbsp of lucuma powder
¼ cup of raw cacao powder
1 ½ tsp of baking powder
coconut oil for baking
METHOD
1. Whisk the milk, water, buckwheat flour, and chia seeds together. Let sit a few times for at least 15 mins of whisking.
2. Combine the lucuma, cacao, and baking powder together. Whisk them into the batter of the pancake.
3. Grease a medium-hot coconut oil pan and bake the pancakes on both sides for a couple of minutes.
TIPS
1.Ever heard of lucuma? Simply leave it out. Lucuma is a Peruvian superfood fruit that is used in smoothies, ice creams, and desserts dried and powdered. It tastes a bit like caramel and is sweet enough.
2. Buckwheat is naturally gluten-free and you could use any flour you desire. If you are celiac, please read the packaging carefully and some buckwheat is handled in the same manufacturing facilities as grains.
