Time for another simple chicken dinner recipe, this time the very famous Crockpot Cheesy Chicken Spaghetti in a faster, one-pot version. This stovetop version will make you insane if you don’t have the time to make my Crockpot version of Chicken Spaghetti! It’s quicker, uses a lot of the same ingredients, and turns out to be just as yummy and creamy!
It is traditionally a creamy and cheese-baked pasta casserole filled with spaghetti, chicken, mushroom soup cream, bell peppers, green chili peppers, and lots of cheddar cheese for all of you who are not familiar with this dish. Casseroles are wonderful and the longer they cook, they typically taste incredible, but I almost tend it right out of the pot for this particular dish because it’s at its peak of creamy and cheesy perfection. Plus, you don’t have to cook in the pot the whole recipe and then dirty a 9-13 dish just to bake it a little more with a few additional cheeses on top (although there’s nothing wrong with that way of doing it… I’m just really impatient.

1 lb. spaghetti
2 tablespoons of olive oil
salt & pepper to taste
1 lb. of chicken cutlets*
1 cup of yellow onion diced
1/2of red bell pepper diced
1/2 of green bell pepper diced
1 small can mild diced green chiles
16.9 oz of alfredo sauce Trader Joe’s brand preferred (1 jar)
1 teaspoon of cumin
1/2 teaspoon of chili powder
1/2 teaspoon of garlic powder or granulated garlic
1 cup chicken broth
8 oz. sharp of cheddar cheese grated
a few splashes of chicken broth or milk as needed
chopped cilantro optional
