Ingredients
- 16.5 oz sugar cookie dough package
- 1 stick unsalted butter, softened
- ⅔ cup of granulated sugar
- ¼ tsp salt
- ¾ cup all-purpose flour
- 2 large eggs room temp
- 1 tsp pure vanilla extract
- 2 tbsp fresh lemon juice
- 2 tbsp lemon zest
- Powdered Sugar, for garnish
Instructions
- Preheat your oven to 350 degrees Fahrenheit.
- Grease an 8×8-inch baking dish with cooking spray.
- Dust a little flour onto your fingers and use it to separate the cookie dough. Press the sugar cookie dough evenly into the bottom of the prepared baking pan.
- Bake for 12 minutes, then remove the pan from the oven and let it cool for 10 minutes.
- While the cookie crust cools, in a mixer bowl, combine butter, sugar, salt, and flour until well mixed.
- In a separate bowl, whisk together the eggs, vanilla extract, lemon juice, and lemon zest until smooth.
- Pour the egg mixture into the flour mixture and beat at medium speed until smooth and creamy, about 2 minutes.
- Carefully spread the lemon brownie batter evenly over the cooled cookie dough (the dough may still be warm and slightly movable).
